How to make Boondi Laddu | Ladoo with detail step by step process. Boondi Laddu is a traditional Indian sweet made of gram flour (besan) batter, cashews, raisins, ghee and the light flavor of cardamom. It’s usually made during festival seasons or other auspicious occasions.

There are two types of gram flour laddu, the one we are showing in this recipe is Boondi Laddu and the other is Motichoor Laddu. Both has similar procedure with few changes. It is arguably easy to make Boondi laddu when compared to Motichoor Laddu.

Few important tips or recommendations for perfect and soft ladoo recipe.

  • Boondi has to be fried on the medium flame and the oil or ghee should be hot but not too hot (smoky)
  • Batter should be in pouring consistency (Not so thick or so thin). If it is thick boondi ball with tail will form, add some water to get the consistency.
  • Sugar Syrup should be in one string consistency.
  • shape them to laddu, when it is warm enough to hold in your hands.

We can have this home-made boondi laddu for a week stored in an air tight container. While shaping the laddu, if it becomes dry, heat the sugar syrup for 1-2 minutes and repeat the shaping process. It will be easy to shape at that state.

Ingredients
  

  • 1 1/2 cups Gram flour Besan flour
  • 1 pinch Salt
  • 1/4 tsp Turmeric powder
  • 3/4 cup Water for mixing gram flour
  • 1/2 cup Water for making sugar syrup
  • 2 pieces Cloves
  • 1/4 tsp Cardamom powder
  • Oil as required for frying
  • 1 cup Sugar
  • 2 tsp Ghee
  • few Crystal diamond sugar Kalkandu
  • few Fried raisins
  • few Fried cashews

Instructions
 

Boondi Preparation

  • Take one and half (1 1/2) cups of gram flour sieve it well to a mixing bowl
  • Add a pinch of salt and 1/4 tsp of turmeric powder to the gram flour. We are not using any food color, so have added a little turmeric powder.
  • Now add 3/4 cup of water little by little to make a smooth batter. The batter should be in pouring consistency (neither thick nor thin)
  • Heat the oil in the pan for frying boondi. The oil should be hot but not too hot (smoky hot)
  • Spill a little bit of batter in the oil to check the consistency. We will get round boondis when its in right consistency. If it turns out to be flat, then the batter is thin. If the boondis has tails, the batter is thick. Make appropriate changes to the batter.
  • Take the boondi ladle/ boondi jhara, place it above the oil. Now pour and spread the batter in the circular motion so that the boondi drops fall off quickly and evenly from the ladle.
  • The boondis should be crispy not over cooked. Take the boondis out before it turns brown in color
  • Repeat the process for rest of the batter
  • Transfer the boondis to mixer, add 1 or 2 cloves and 1/4 tsp of cardamom powder along with it and pulse it for few seconds.

Sugar Syrup Preparation

  • Add a cup of sugar and 1/2 cup of water in a pan. Boil it for few minutes to get an one string consistency.
  • Add 2 tsps of ghee to the sugar syrup ,give a mix and switch off the flame.

Boondi Laddu Preparation

  • Now pour the sugar syrup little by little into the boondi and mix it well.
  • The boondi will absorb all the syrup. Leave it for 5 minutes to rest.
  • In the meantime fry some cashews and raisins in a tbsp of ghee.
  • After 5 minutes add crystal diamond sugar, fried cashews and fried raisins to the boondi mixture and mix it well.
  • Start shaping laddus when the you are able to handle the mixture (bearable heat) in your hand. If the mixture starts crystalizing, heat it for 2-3 minutes and repeat the shaping process.
  • Our boondi ladoos is ready now. Store it in an airtight container. It will stay good for a week.

Boondi Laddu Preparation


1. Take 1 1/2 (1.5) cups of gram flour (besan) and sift it well to remove any large particles. If it’s not sifted properly, the flour may have a dense heap, which will create issues while preparing the batter.

2. After sifting, add a pinch of salt and 1/4 tsp of turmeric powder to the flour and mix it well. We are not adding any food color for this recipe, so we used turmeric powder to enhance the color.

3. Make the boondi batter by adding water little by little and mixing it well. The batter should be flowing and not too thick or too thin.

4. Heat the oil/ghee in a pan until it becomes hot, but not too hot (smoky hot). Once the oil is hot enough, set it to medium flame. We will first check the consistency of the batter before making boondi.

5. Add a little batter to the ladle and check if the boondi is coming in a round shape. If it turns out to be flat the batter consistency is thin or if it has tails, then the batter consistency is thick. Make the adjustments to get the flowing consistency.

6. After getting the flowing consistency, pour a ladle of batter in boondi ladle and spread it in a circular motion so the batter drops falls off quickly. Repeat the process for the remaining batter.

7. After preparing the boondi add it to a mixer along with a few cloves and 1/4 tsp of cardamom powder and pulse it for a few seconds. So we get a mixer of round and few grained boondis.

Sugar Syrup Preparation


8. Add a cup of sugar and 1/2 cup of water to a pan and boil it for few minutes to get a one string consistency.

9. Add 2 tsp of ghee to sugar syrup, stir it well for few seconds and switch off the flame.

10. Add the sugar syrup to boondi, mix it well, and rest it for 5 minutes.

11. In the meantime, fry some cashews and raisins in a tbsp of ghee. After 5 minutes mix the fired cashews, raisins, and crystal diamond sugar to the boondi mixer.

12. Start shaping ladoo when it is warm enough to handle with hand. While shaping, if the sugar syrup starts crystalizing, heat it for 2–3 minutes. We can store it in an airtight container for a week.
