Add a tsp of ghee in a pan and fry the raisins, take them out and set aside.
Add another tsp of ghee and add the grated carrot.
Saute them for about 5 mins or until the carrots are half cooked.
Add the shredded coconut and saute everything for another 5 minutes.
Add the sugar (according to your taste) and give a nice mix. Let the sugar melts completely.
Close it with a lid and cook for another 5 mins in low flame.
Add the cardamom powder and the fried raisins.
Give a nice saute for few minutes until the carrots get completely cooked.
Add some ghee if necessary, it will give a nice glossy texture. Once done you can switch of the flame.
Transfer the carrot coconut mixture into a bowl. Let it cool down a little bit.
Once the heat is bearable, make small balls out of it. Our laddu is ready.
