How to make Marshmallows | Easy homemade marshmallows
Marshmallows are sweet, fluffy candies made of sugar, gelatin and corn flour. Homemade marshmallows are easy to make and if it is stored in an air tight container can served for long time. Here we have prepared marshmallows without corn syrup, and without a sugar thermometer. We can use maple syrup or honey too.

Preparation Steps
Take half cup of powdered sugar and a quarter cup of corn flour, mix it well in a mixing bowl. This mixture is used for dusting
Take a tray, line it with parchment paper and dust the above mixture evenly with shifter or a dusting wand on top and sides of the parchment paper
Prepare half a cup of hot water, add 2 tbsp of gelatin to it and mix it well. It may not completely dissolve that should be fine.
Sugar Syrup Preparation
Take a pan add a cup of sugar and half cup of water, boil it in medium flame. Keep stirring it for 5 - 8 mins until the sugar melts and get little concentrated.
For checking soft ball consistency, take a cup of water and pour a little sugar syrup into it. Now try rolling it to make a firm ball. That's the soft ball consistency.
When the sugar syrup is in soft ball consistency, add the gelatin mix and stir it for a minute or until it dissolves completely. Now switch off the flame.
Marshmallow Preparation
Transfer the sugar syrup to a bowl and add a tsp of vanilla essence. Start beating the sugar syrup using a electric beater when it is hot. Beat it well until it becomes soft and fluffy white.
Transfer the cream to the tray to which we have dusted previously with powdered sugar and corn flour mixture and spread it evenly. Then dust it again on top of the fluffy cream.
If you want different color marshmallows, add some food color to the fluffy cream and beat it well until the cream is evenly colored.
Keep the tray in refrigerator for 3 hours and let it settle.
After 3 hours, we can cut the marshmallow to the desired shapes. When cutting we need to dust the knief and the borders with the dusting mixture / flour to avoid sticking to it.
1. When checking for soft ball consistency,
- If the sugar syrup melts in the cold water, then it is yet to reach the right consistency. Heat it for few minutes and try the same process.
- If overheated the ball may be hard and rigid, add some water to bring it back to the right consistency.
2. Adding Egg white is optional, it will help to soften the marshmallow. But it can't be stored and used for long time.
3. You can also use other flavor in place of Vanilla depends on your taste.
