Potato curry

Potato curry is a simple curd based recipe with potatoes. This is an easy and tasty potato curry recipe that can be made quickly. Gluten-free and vegan.

Ingredients
  

  • 2 to 3 Boiled potatoes
  • 1 cup Curd / Yogurt
  • 2 tbsps Oil
  • 1 Bay leaf
  • 1 Cardamom
  • 1 stick Cinnamon
  • 1 tsp Cumin seeds
  • 1/4 cup Onions
  • 1 Green chili
  • 1 tsp Ginger garlic paste
  • Few Curry leaves
  • 1/2 tsp Turmeric powder
  • 1 tsp Chili powder
  • 1&1/2 tsp Coriander powder
  • 1/2 tsp Garam masala
  • 1 tsp Dry fenugreek seeds (kasuri methi)
  • Few Coriander leaves
  • Salt as required

Instructions
 

  • Beat a cup of curd and set aside.
  • Add some oil in a pan. Once the oil is hot add bay leaf, cloves, cinnamon, cardamom and cumin seeds and sauté them for a minute.
  • Add the chopped onions, green chili and ginger garlic paste and sauté till the raw smell goes off.
  • Add turmeric powder, chili powder, coriander powder, garam masala and salt. Sauté everything for about a minute or two.
  • Add the beaten curd and mix well.
  • Add boiled and chopped potatoes.
  • Close and cook for few minutes or until the oil oozes out.
  • Crush and add the dry fenugreek leaves (kasuri methi) for flavor.
  • Garnish with few chopped coriander leaves.
