Spicy boondi

Spicy Boondi, a simple deep-fried teatime snack prepared from besan or gram flour batter and spices, which is then mixed with roasted nuts and curry leaves.

Ingredients
  

  • 1 & 1/2 cups Besan / Gram flour
  • 1/4 cup Rice flour
  • 1/4 tsp Asafoetida (Hing)
  • 1/2 tsp Turmeric powder
  • 1 tsp Chilli powder
  • 1 pinch Baking soda
  • Salt as required
  • 1 tbsp Ghee
  • 1/4 cup Groundnuts / Peanuts
  • Few Cashew nuts
  • Few Curry leaves
  • Oil for frying

Instructions
 

Batter preparation

  • Add gram flour and rice flour in a mixing bowl.
  • Add asafoetida, turmeric powder, chilli powder and salt and mix everything well.
  • Add water little by little to get a thin batter. Most likely a dosa batter consistency. It should not watery or too thick
  • Add pinch of baking soda. Mix it well.

Frying boondi

  • Heat enough oil in a pan for frying.
  • Now take a dry perforated ladle/jhara and place it above the hot oil. With a spoon add some batter on the perforated spoon ladle/jhara. Spread the batter lightly with a spoon.
  • Fry till it turns crispy

For mixture

  • In another small pan, take 1 to 2 teaspoons ghee or oil.
  • Add a handful of groundnuts / peanuts, fry till it turns crunchy and keep aside.
  • Add few cashew nuts and fry them untill they turn golden.
  • Add a few strings of curry leaves and fry them.
  • Transfer the fried nuts and curry leaves into a bowl. Add salt and chilli powder according to your taste.
  • Mix boondi and fried nuts together.
