Sweet boondi

Sweet Boondi is a super easy and quick-to-make dessert recipe prepared from boondi snack. It is a very common sweet in any Indian home. Deep fried boondi balls are soaked in sugar syrup to get a perfect festival sweet. The main ingredients used to prepare this recipe are gram flour, cardamom, ghee and sugar.

Ingredients
  

  • 1 cup Besan / Gram flour
  • 2 cups Sugar
  • 2 Cardamom
  • Water
  • Oil (for frying)
  • 10 to 15 Cashews
  • 15 to 20 Raisins

Instructions
 

For batter:

  • Take gram flour in a bowl. And water little by little and stir well for a dosa batter consistency.

For sugar syrup:

  • Add sugar and water in a pan and stir occasionally until the sugar melts.
  • Add the crushed cardamom and boil in medium flame.
  • Check for one string consistency. Once the consistency is obtained you can switch of the flame.

For frying boondi:

  • Take enough oil in a pan for frying.
  • Now take a dry perforated ladle and place it above the hot oil. With a spoon add some batter on the perforated spoon ladle. Spread the batter gently with a spoon.
  • Finish the batter on the perforated spoon ladle this way. Fry it till turns crispy.
  • In another small pan, take 1 to 2 teaspoons ghee.
  • Add cashews and raisins and fry them until the cashews are slightly brown.
  • Take a mixing bowl. Add the fried boondi, nuts and raisins.
  • Add the sugar syrup little by little and mix the boondi gently.
  • Give an hour time for the boondi to observe the sugar syrup.
  • You can serve immediately or store it in an air tight container.
