Boondi, a small sized deep fried crispy Indian snack prepared from gram flour. There are spicy boondi as well as sweet boondi. We are going to prepare the spicy version.
The spicy boondi batter is prepared by mixing gram flour and few spices. The batter is passed through a ladle with holes. The size of the spicy boondi depends on the size of the holes in the ladle, so choose according to your need.
Spicy Boondi is a simple deep-fried teatime snack prepared from gram flour batter and spices. Adding fried nuts and fried curry leaves gives and additional taste to the recipe. It is one of the popular festival snack. Most South Indians will prepare this crunchy snack during the Diwali festival. Popularly known as kara boondi, it is a favorite tea time snack in many Indian houses.
Spicy boondi is quick and easy to make recipe that lasts for a couple of weeks in an airtight container.
The consistency of the batter plays an important role in the making of kara boondi or even making boondi for ladoo. Consistency must be right to ensure that the boondi holds its round shape.
The process isn’t difficult at all, but you may face difficulties in getting round shape of boondi.
Tips for perfect shaped boondis
- The batter has to be thin and free flowing. Above all it should not be watery.
- Spread the batter evenly over the ladle. This will help the batter drop into the oil smoothly and quickly .
- Don’t hold the ladle very high and drop the batter, this will make the boondis flat. Therefore keep the ladle a few inches away from the oil.
- Clean your ladle with a moist cloth every single time before pouring the batter.
I love the process of making kara boondi. I helped my mom when I was a kid, now my kids are helping me while preparing kara boondi. Let’s get into the recipe.
Spicy boondi
Ingredients
- 1 & 1/2 cups Besan / Gram flour
- 1/4 cup Rice flour
- 1/4 tsp Asafoetida (Hing)
- 1/2 tsp Turmeric powder
- 1 tsp Chilli powder
- 1 pinch Baking soda
- Salt as required
- 1 tbsp Ghee
- 1/4 cup Groundnuts / Peanuts
- Few Cashew nuts
- Few Curry leaves
- Oil for frying
Instructions
Batter preparation
- Add gram flour and rice flour in a mixing bowl.
- Add asafoetida, turmeric powder, chilli powder and salt and mix everything well.
- Add water little by little to get a thin batter. Most likely a dosa batter consistency. It should not watery or too thick
- Add pinch of baking soda. Mix it well.
Frying boondi
- Heat enough oil in a pan for frying.
- Now take a dry perforated ladle/jhara and place it above the hot oil. With a spoon add some batter on the perforated spoon ladle/jhara. Spread the batter lightly with a spoon.
- Fry till it turns crispy
For mixture
- In another small pan, take 1 to 2 teaspoons ghee or oil.
- Add a handful of groundnuts / peanuts, fry till it turns crunchy and keep aside.
- Add few cashew nuts and fry them untill they turn golden.
- Add a few strings of curry leaves and fry them.
- Transfer the fried nuts and curry leaves into a bowl. Add salt and chilli powder according to your taste.
- Mix boondi and fried nuts together.

Collect the fried nuts and curry leaves. Add salt and chilli powder according to your taste.
Mix boondi and fried nuts together.
