Laddu or laddoo is a sphere-shaped famous festival sweet from the Indian subcontinent. They are primarily made from gram flour, ghee and sugar. Other than gram flour, semolina (rava / sooji) is used commonly for making this. Sometimes ingredients such as chopped nuts and/or dried raisins are also added.
Laddu is everyone’s favorite and easy to do recipe for any occasion. Rather than normal laddu, today we are going to try some healthy laddus. We are going to use carrots and shredded coconut instead of flour to make laddus.
Carrot laddu or gajjar laddu recipe is very easy to make for any special occasions with few ingredients like carrot, coconut, sugar and ghee.
Halwa and kheer are very common desserts we used to make with carrots. For a change you can give this a try. Carrot laddu will be ready in minutes and will taste awesome, very importantly, kids will love it for sure. I always love desserts with carrot and this laddu is sure going to my keeper recipe for any get together or sudden guests. Gajjar laddu will probably be everyone’s favourite.
Carrot Laddu
Ingredients
- 2 cups Carrot (grated)
- 1 cup Coconut (shredded)
- 1/2 cup Sugar
- 1/4 cup Raisins
- 1/4 tsp Cardamom powder
- 2 tbsps Ghee
Instructions
- Add a tsp of ghee in a pan and fry the raisins, take them out and set aside.
- Add another tsp of ghee and add the grated carrot.
- Saute them for about 5 mins or until the carrots are half cooked.
- Add the shredded coconut and saute everything for another 5 minutes.
- Add the sugar (according to your taste) and give a nice mix. Let the sugar melts completely.
- Close it with a lid and cook for another 5 mins in low flame.
- Add the cardamom powder and the fried raisins.
- Give a nice saute for few minutes until the carrots get completely cooked.
- Add some ghee if necessary, it will give a nice glossy texture. Once done you can switch of the flame.
- Transfer the carrot coconut mixture into a bowl. Let it cool down a little bit.
- Once the heat is bearable, make small balls out of it. Our laddu is ready.
