Homemade Marshmallow Recipe
Step 1 – Preparation
1. Take 1/2 cup of powdered sugar and a 1/4 cup of corn flour mix it in a bowl and keep it ready. This mixture will be used for dusting during the preparation process.
2. Line a parchment paper on a baking tray or any tray and dust the earlier prepared dusting mixture on top and sides of the parchment paper.
3. Take 2 tablespoons (tbsp) of Gelatin, add 1/2 a cup of hot water to it, and mix it well until it dissolves. It may not dissolve completely, but that should be fine. Keep these things ready before we jump into marshmallow preparation.
Step 2 – Sugar Syrup Preparation
4. Start preparing the sugar syrup. Take a cup of sugar add 1/2 cup of water and mix it in a pan. Heat it in a medium flame for 5 – 8 mins until the sugar melts and gets a little concentrated.
5. After heating it for 5 – 8 minutes, we need to check the sugar syrup consistency. We need a soft ball consistency for making marshmallows. If you have a candy thermometer, we get the soft ball consistency around 240°– 245° F.
The other option is to take a cup of cold water and put a few drops of sugar syrup, roll it to make a ball. If it is in the right consistency we can make a soft, pliable ball, else it may dissolve in water if it is not ready, boil it for a few minutes to get the soft ball consistency. If overheated the ball may be too firm, you can add a little water and stir it to get the right consistency.
6. Pour the gelatin mixture into the sugar syrup once we have reached the soft ball consistency. The gelatin would not have dissolved properly or completely, so we have to stir it properly until it dissolve completely, it may take 1 – 2 minutes.
Step 3 – Marshmallow preparation
7. Transfer the sugar syrup to a bowl and add a teaspoon(tsp) of vanilla essence to it.
8. Start the beating process when the sugar syrup is hot. It may take around 7 – 10 minutes to get the thick creamy consistency.
9. Spread the marshmallow evenly to the earlier dusted pan lined with parchment paper. If you want the marshmallow to be in different colors, you can add food color to a part or the whole portion and beat it until it is mixed evenly.
We have added yellow food color to a portion of the mixture to make a multi-color marshmallow as shown in the below picture. It is optional and it depends on your likes.
10. Once the marshmallow is spread evenly, dust it on top and side of the marshmallow with the dusting mixture.
11. Keep it in the refrigerator for 2 – 3 hours or we can also leave it overnight to get it set properly.
12. The last and final step is to cut the marshmallows to the desired shape. For this, you need to dust the marshmallow borders and the knife while cutting as it will be sticky.
That’s it! Sweet, delicious homemade marshmallows are ready to be consumed. We can store these marshmallows in an air-tight container and they stay good for a few weeks.
