Snake gourd stir fry recipe with step by step photos – This is a simple stir fry with snake gourd and freshly grinded coconut masala. The coarsely grinded coconut masala will give a great flavor to the dish.

Snake gourd is also known as pudalangai in Tamil. We South Indians used to prepare a lot of coconut based dishes and this is one such. A delicious vegan dish.

We use various types of gourd in our everyday cooking. Snake gourd is my personal favorite and it has a unique taste and can be used in most of the dishes. One advantage with gourds is, it can be cooked very quickly.

As far as fry is concerned you can make this in two ways, one is coconut based (the one that i am going to share here) and the other one is adding soaked channa dal to the sauteed snake gourd.

Other than fries, we can also make kootu, sambar, kuzhambu, pachadi and chutney with this gourd. Kootu (thick curry) is mostly dal based and is a perfect side dish for rice. Sambar is again dal based and kuzhambu (curry) can be made tamarind based or coconut based. Cooked snake gourd can be added to beaten curd along with masala and tempering to make a perfect pachadi. The peeled skin of the snake gourd can be sauteed and grinded along with sauteed onions and fries dals and chillies to make a delicious chutey.

Snake gourd stir fry

Snake gourd fry recipe is a simple stir fry with snake gourd and freshly grinded coconut masala. The freshly prepared coconut masala will give a great flavor to the dish.

Ingredients

  • 2 Medium sized Snake gourd
  • 1 Onion

For grinding

  • 1/4 cup Coconut
  • 2 or 3 Green chillies
  • 3 or 4 Shallots or 1/4 Onion
  • 1 tsp Cumin seeds

For tempering

  • 1/2 tsp Mustard seeds
  • 1/4 tsp Split black gram / Urad dal
  • 1 tsp Split chickpeas / Channa dal
  • Few Curry leaves

Instructions

  • Add some oil in a pan.
  • Once the oil is hot, add mustard seeds and split black gram.
  • When the mustard seeds starts popping, add the split pigeon peas and the curry leaves.
  • Add the onions and saute until it turns translucent.
  • Add the chopped snake gourd and saute for few minutes.
  • Add water and salt and close and cook until the water is completely evaporated.
  • Grind the coconut, green chillies, shallots and cumin seeds coarsely.
  • Add the grinded masala and saute for few minutes.
  • Garnish with few coriander leaves.

Step 1: Add some oil in a pan. Once the oil is hot, add mustard seeds and split black gram.

Step 2: When the mustard seeds starts popping, add the split pigeon peas and the curry leaves.

Step 3: Add the onions and saute until it turns translucent.

Step 4: Take 2 medium sized snake gourd. Remove seeds and skin and chop them.

Step 5: Add the chopped snake gourd and saute for few minutes.

Step 6: Add water and salt and close and cook until the water is completely evaporated and the snack gourd becomes soft.

Step 7: Grind the coconut, green chillies, shallots and cumin seeds coarsely.

Step 8: Add the grinded masala and saute for few minutes.

Step 9: Garnish with few coriander leaves.
