Sweet Boondi is a super easy and quick-to-make dessert recipe prepared from boondi snack. It is a very common sweet in any Indian home. Deep fried boondis are soaked in sugar syrup to get a perfect festival sweet. The main ingredients used to prepare this recipe are gram flour, cardamom, ghee and sugar.
Sweet boondi is an important recipe as per the Hindu culture. They are often distributed in many parts of India specifically on Tuesdays on remembrance of Lord Hanuman.
It is a traditional Indian mithai and a must-try recipe for all those who have a thing for sweet dishes and desserts. Both kids and elders love sweet boondi. It is one of my favorite sweet recipe from my childhood.
Sweet boondi and khara boondi are part and part any South Indian home as we are more attached to it, not only by the taste but also by the memories that we carry. In my childhood days me and my sister used to offer a helping hand to our mom during Diwali time, especially when she was preparing snacks and sweets. Even though our mom knows why we are particularly helping her while doing snacks and sweets she used to allow us with a smile.
Tasting the freshly made Diwali snacks and sweets are heavenly, and that too golden fried murukku straight out of the oil is my favorite, even though I know that murukku needs time to turn perfectly crispy. Those memories are too hard to express in words. Guess most of us will have memories like this.
The consistency of the batter plays an important role in the making of boondi for ladoo. Consistency must be right to ensure that the boondi holds its round shape.
The process isn’t difficult at all, but you may face difficulties in getting round shape of boondi.
Tips for perfect shaped boondis
- The batter has to be thin and free flowing. Above all it should not be watery.
- Spread the batter evenly over the ladle. This will help the batter drop into the oil smoothly and quickly .
- Don’t hold the ladle very high and drop the batter, this will make the boondis flat. Therefore keep the ladle a few inches away from the oil.
- Clean your ladle with a moist cloth every single time before pouring the batter.
Let’s get into the recipe.
Sweet boondi
Ingredients
- 1 cup Besan / Gram flour
- 2 cups Sugar
- 2 Cardamom
- Water
- Oil (for frying)
- 10 to 15 Cashews
- 15 to 20 Raisins
Instructions
For batter:
- Take gram flour in a bowl. And water little by little and stir well for a dosa batter consistency.
For sugar syrup:
- Add sugar and water in a pan and stir occasionally until the sugar melts.
- Add the crushed cardamom and boil in medium flame.
- Check for one string consistency. Once the consistency is obtained you can switch of the flame.
For frying boondi:
- Take enough oil in a pan for frying.
- Now take a dry perforated ladle and place it above the hot oil. With a spoon add some batter on the perforated spoon ladle. Spread the batter gently with a spoon.
- Finish the batter on the perforated spoon ladle this way. Fry it till turns crispy.
- In another small pan, take 1 to 2 teaspoons ghee.
- Add cashews and raisins and fry them until the cashews are slightly brown.
- Take a mixing bowl. Add the fried boondi, nuts and raisins.
- Add the sugar syrup little by little and mix the boondi gently.
- Give an hour time for the boondi to observe the sugar syrup.
- You can serve immediately or store it in an air tight container.
